We allow our meats and fish time to rest under carefully controlled conditions, letting natural enzymatic processes gently develop tenderness and flavour. From chicken and fish to mutton and beef, we believe good ingredients need time—not shortcuts. Responsibly sourced produce from local farmers, bringing the freshest flavors to your table.




It All Began With Thea
Patrizia Norelli-Bachelet
In 1971, Thea left Rome for the Sri Aurobindo Ashram in Pondicherry, India. Deeply influenced by the Mother's teachings, she later found her path at the Aeon Centre of Cosmology in 1986.
Years later, at her estate, Skambha, near Kodaikanal, Thea kept her own herd of cows. There was often more fresh milk than could be consumed. Rather than let it go to waste, she began looking for a way to preserve it.
Her curiosity and love for the rich, authentic taste of European cheeses led her to begin making small batches by hand.
What started simply as a way of using what the land provided grew into a remarkable tradition of cheese-making — rooted in resourcefulness, patience and respect for the craft.
Today, Skambha remains part of the landscape and story that surrounds us.

From the mist-laden slopes of Pethuparai at 1,431 meters, Skhambha Estate coffee emerges with quiet intensity. Rooted in rich mountain soil and nurtured by forest shade, this blend of medium and dark roasts unfolds with depth, warmth and a lingering sense of crafted simplicity.
